Easy Coconut Flour Pizza Crust
I love coconut flour. I use it for so much. It's great for thickening things up, using in protein/ energy balls, RGE cooke skillet, etc. I recently set out to find a way to use coconut flour as a pizza crust.
I searched online, but every recipe that I found was SO COMPLICATED. WHY. I ended up experimenting on my own, following bits and tricks from different recipes here and there until I developed this.
It's fluffy AF, you can flavor it how you want, and it takes about 5 minutes to throw together. Perfect for when you're super busy (or super hungry).
It's paleo, gluten free, dairy free, and if you use a flax egg (which I haven't tried) it can be vegan.
-2 Tbsp coconut flour
-2 egg whites
-seasoning to taste (I used salt, pepper, and garlic powder)
Mix all ingredients. It will form a pancake batter-type mixture. Heat an oiled pan on the stove top over medium heat. Pour mixture onto pan; you may need to spread it around with a spatula because it may coagulate in a blob. After a few minutes, flip onto the other side like you would a pancake. Remove from pan and place on oiled baking sheet when fully cooked.
Add toppings of choice and bake for around 10 min on 375, then 2 minutes on broil.
