Snickerdoodle Cashew Pulp Chia Balls
So yesterday I made cashew milk instead of the usual almond milk, and I'm not sure if I'll ever switch back. It's so creamy the pulp that came from it was soooo much easier to work with than the almond pulp I get when I make almond milk.
I posted this recipe on my insta and it seemed to be a hit, so I thought I would document it here for anyone who wants the recipe (and for myself). Although I'm not sure you will even need a recipe after making them one time- they're THAT easy.
They're chewy, fluffy, moist, sweet and salty, and UGH. Just so good. They're perfect for an after dinner snack, an addition to oatmeal or a smoothie, or a pre or post workout snack.
-pulp from making cashew milk from one cup of cashews
(followed the almond milk recipe in my almond milk post, but with cashews)
-1 scoop protein powder
(I used PEScience Select Snickerdoodle protein, but you can use any protein you'd like)
-1 Tbsp chia seeds
Put the pulp in a big bowl and add the protein powder and chia seeds. Knead the dough with your hands making sure all the ingredients are evenly distributed throughout the dough. Roll into balls (my dough made 8 good sized balls). Store in the fridge or freezer until ready to eat.
See how easy that is? Just 3 ingredients and they taste like they took hours of hard work!
