Pumpkin Chocolate Chip Oatmeal Bread
This past October, Madison (@madscleaneats) and I hauled up in her apartment with her pup for 5 days waiting for our impending doom that never came- Hurricane Florence. But hey we had fun and ate some good food. By the last days we were forced to get creative with what we had as ingredients and alas! Oatmeal choc chip bread was born. It was so good I made it post-hurricane and tweaked it to include pumpkin too.
-2 ripe bananas (use 3 and omit pumpkin if making it not pumpkin flavored)
-1/3 cup pumpkin puree
-2 eggs (or chia eggs)
-1/3 cup applesauce
-1 tsp baking powder
-2 cups rolled oats
-splash of vanilla
-pumpkin pie spice
-chocolate chips and cacao nibs
Preheat oven to 400 degrees F. Mash together all ingredients except oats and chocolate chips and cacao nibs in a large bowl and mix in oats until combined. Then mix in cacao nibs and chocolate chips (no measurement for these- just what your heart desires). Pour into a lined loaf pan or lined 8x8 pan and sprinkle more chocolate chips on top. Bake for 20 minutes.
Let cool then cut!
